Ingredients:
- 1/2 pound (2 sticks) dairy-free margarine
- 1 cup firmly packed brown sugar
- 1/2 cup sugar
- 2 eggs (pasteurized)
- 1 tsp. vanilla
- 1 1/2 cups Pamela's Baking Mix (no gluten!)
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3 cups Gluten-Free Oats
- 1 cup golden raisins
- 1/2 cup crushed walnuts
Directions:
Heat oven to 350 F.
Beat together margarine and sugars until creamy.
Add eggs and vanilla. Beat well.
Add baking mix, cinnamon, and salt. Mix well.
Stir in oats, raisins, and walnuts.
- Stop and eat some delicious dough (if eggs are pasteurized)!
Drop spoonfuls onto ungreased cookie sheet.
Bake 10-12 minutes or until golden brown.
Cool 1 minute on cookie sheet and then on wire rack.
Makes 4 dozen.
Now go eat some cookies!
