Pineapple Upside Down Cake




Ingredients:
  • 2 cups Pamela's Baking Mix (gluten free!) 
  • 4 eggs 
  • 3/8 cup oil 
  • 1/2 cup milk or dairy-free milk
  • 1 cup sugar 
  • 1 1/2 t vanilla 
  • 3 T pineapple juice 
  • Pinch of salt 
  • 2 T melted butter or equivalent
  • 1/2 cup brown sugar 
  • Pineapple rings (1 can)
  • Pineapple tidbits (1 can)
  • Bonus: Maraschino cherries (1 jar)
Directions:

Preheat oven to 350°. 

Mix all ingredients except butter, brown sugar, and pineapple. 

Melt butter and coat large cake pan. Sprinkle the brown sugar evenly to cover the butter. Arrange pineapple rings around the bottom of the pan, one layer deep. Add tidbits around the rings. 

Bonus: add maraschino cherries to the centers of the pineapple rings.

Pour batter over pineapple layer. Cook for 40-45 minutes or until toothpick comes out clean. 

When finished, let cool before flipping over. Yummy!!
